LIZZIE BY THE SILOS
3.8% ABV | Farmhouse Table Ale Collaboration with @LittleDogBrewingCompany This collaborative brew has been a long time in the making, and we are honored to have collaborated with the one and only Gretchen from Little Dog Brewing Company to craft a special little table beer that we are very excited to share with you all! Lizzie By The Silos, named after Gretchen’s beloved pooch, was brewed with locally grown and floor malted farmhouse pilsner and red wheat malts from @rabbit_hill_malthouse and hopped lightly in the kettle with Zuper Saazer and Hallertau Mittelfrüh. For primary fermentation, we pitched a special blend of two of our favorite saison yeasts along with some Brettanomyces anomala, which contributes lovely juicy fruit esters, moderate funk, and just a touch of acidity. Lizzie By The Silos was then bottle conditioned with Brett bruxellensis and left to condition and develop a natural carbonation in the final package. When poured into a glass, Lizzie By The Silos showcases its beautiful golden-straw color beneath its mesmerizing crown of white, aromatic foam. You can expect a wonderful, fragrant, light-bodied farmhouse ale that drinks with a depth of flavors that are complex, delicate, and approachable. We get notes of delicate bready pilsner malt, Mandarin orange wedges, bright lemon mist, earthy cracked black peppercorns, juicy fruit gum, barnyard hay, and breeze through a farmhouse herb garden.

This frothy golden beauty was crafted with a delicate blend of extra pale pilsner and Munich malts along with flaked rice to promote a lightened body and a crispy finish. Grip N’ Rip was hopped lightly for balance in the kettle with American noble varietals that offer subtle notes of herbs, spice, and citrus. You can expect a beer brewed with drinkability top of mind that features supreme balance, delicate flavors, effervescence, and a crisp, highly refreshing finish. We get notes of freshly baked bread, pizza dough, delicately sweet pilsner malt, peppered white rice, Bartlett pear, lemongrass, and a gentle breeze through a thriving herb garden.

POLOTMAVÉ 🇨🇿
4.4% ABV | Czech-Style Amber Lager Embark on a journey to the heart of Bohemia with our latest creation, Polotmavé!🍻 Polotmavé translates to “half dark,” a fitting description for this brilliant, amber hued lager. Polotmavé is an easy drinking, light-bodied brew that seamlessly weaves together Bohemian floor malted pilsner for a rich malt foundation and Czech Saaz hops for a delicate floral spice. Our commitment to tradition shines through with extended cold conditioning in one of our horizontal lagering tanks, ensuring a smooth, rounded mouthfeel followed by a crisp finish that invites you to savor the essence of Czech brewing heritage sip after sip. We get notes of toasted raisin bread, biscuit, lemon poppyseed muffins, plum, caramel, honey, toffee, and a breeze through Bohemian hops fields.

MITTELFRÜH PILS 🍻
5.3% ABV | German-Style Pils Mittelfrüh Pils is our representation of the quintessential German-style lager. We brewed this brilliant beauty with a base of premium German pilsner malt and hopped it generously in the kettle with 100% German grown Hallertau Mittelfrüh hops. After a low and slow fermentation with a classic, Bavarian, lager yeast strain, we transferred the young beer to a horizontal tank for an extended period of cold conditioning. Mittelfrüh Pils pours a brilliant, champagne-gold hue into a glass mug and froths with a healthy, long-lasting crown of delicious, wet, drinkable foam. You can expect a smooth, highly drinkable, light-bodied beer that opens with a gentle kiss of malt character that is quickly met and balanced firmly by the noblest of hops, and ending with a dry, crispy, effervescent finish. We get notes of delicate, grainy, pilsner malt sweetness, lemon balm, misty herb and flower garden, honey, spicy cedar, and German bierstube.
-
SOURCE OF LIGHT 💡
5.6% ABV | Dry Hopped Pilsner Source of Light was brewed with 100% premium German malts and hopped several times in the kettle with one of our favorite New Zealand hop varietals - the bright and zesty, citrus-forward Motueka. We then hopped this crushable lager again with more aromatic Motueka hops in the fermenter before transferring it to horizontal lagering tank for a long, cold-conditioning slumber. The result is a brilliantly golden, light-bodied brew with smooth bitterness, hop-dominated aromas and flavors, and a clean, dry, crisp finish that makes it hard to put down. We get notes of key lime zest, fresh herb garden, white crackers, wildflower honey, and fragrant lemongrass.
-
STEEL CITY LAGER 🍺
5.8% ABV | Dortmunder-Style Lager Steel City Lager is a brilliant, deep golden brew capped with a persistent head of white foam that drinks with a soft, rounded character while showcasing supreme balance and smoothness. This style of beer was very popular with the working class steel and coal miners in Dortmund, Germany after WWII, where it was the most commonly drank beer style until being supplanted by pilsner in 1970. Steel City Lager has a slightly richer malt profile than a helles lager and slightly less hop bitterness than a pilsner, with a deeper golden color and slightly stronger ABV than both. We get notes of rich malt, baked multigrain bread, orange blossom honey, grape nut cereal, nutty toffee, soft noble hop spiciness, earthy sweet herbs, and dried flowers.

PROPER ENGLISH 🇬🇧
5.2% ABV | British-Style Brown Ale This is a proper English pub beer — brewed with balance and drinkability in mind. After quaffing back a few pints of this beautiful, reddish-brown ale we are once again reminded how much we adore this often overlooked beer style. Proper English was brewed with the finest, pale, English, Maris Otter malt, along with a variety of other specialty grains which lend their lightly sweet, nutty, bready, biscuity, toasty, caramel, and chocolatey aromas and flavors. These wonderful malty flavors are quickly met and balanced by gentle hop bitterness and a kiss of floral and earthy English hop character provided by East Kent Goldings & Fuggles hops. This classic, British Brown Ale will surprise you with its depth of flavors and relatively light body, and the pleasantly dry finish will offer strong encouragement for another pint🍻! We get notes of golden brown biscuits, toasted bread, Cheerios cereal, chocolate trail mix, toffee brittle, Whoppers, cedar, forest leaves, lightly roasted coffee, and caramel nut roll.

JACK FROST 🌬️
6.5% ABV | Cold IPA Jack Frost is a tasty, hop-forward, Cold IPA that drinks with the crispness and finesse of a lager. What is a Cold IPA? While not currently recognized as an official beer style, we liken this modern trend in brewing to something between an India Pale Lager and a dry-hopped pilsner with slightly elevated ABV. Jack Frost was brewed with a base of pilsner malt along with a touch of flaked rice to lighten the body. For hops, we decided to feature @yakimachief 303 Trial Blend - a special hop product that blends Cryo Citra, Cryo Simcoe, Cryo Mosaic, and Phantasm (derived from thiol-rich grape skins) into a single, concentrated, hop pellet. We added the 303 Trial Blend to the mash, the whirlpool, and once more during the tail end of active fermentation. Jack Frost was fermented dry with a blend of our house lager yeast and a distinctively tropical, thiolized lager yeast strain. This special yeast strain is genetically modified to biotransform thiol precursors from malt, hops, and grape-derived products into “a new wave of passion fruit, guava, and New Zealand Sauvignon blanc fruitiness.” You can expect a light-medium bodied brew that drinks with a pleasantly smooth bitterness and a crisp, snappy finish highlighted by flavors of tropical fruit and hops. We get notes of juicy overripe red guava, tropical passion fruit, pink grapefruit, Sauvignon blanc grapes, sticky pine, stone fruits, papaya, orange blossoms, and citrus zest.

Late kettle and whirlpool hop additions and a double-dose of dry-hopping with some of our favorite varietals saturate this tasty brew with wonderful fruity hop aromas and flavors that carry through to a juicy, refreshing finish that is sure to make you hoppy. We get notes of tangerine, zumo de naranja, juicy mango, drippy papaya chunks, ripe melon, apricot, peach cup, geraniums, red berries, and a gentle kiss of fresh, dank, pine.

COLTS BOCK 🌽 🚜
7% ABV | Dunkles Bock Crafted with Locally Grown Heirloom Corn Colts Bock is one of our dearest, seasonal lagers that epitomizes what we are all about here at Source — serving farm-to-glass beer drinking experiences. Back in the Spring we visited our friend Stephen Garrett’s family farm to plow the earth and then later cultivate some local heirloom corn. Using a 100-year-old, ground driven, John Deere corn planter originally designed to be drawn by a horse, we sowed the colorful seeds into the rich soil that had been fertilized over many months prior with the spent grains from our brewing process. Later, in autumn, we revisited the small farm to reap our bountiful harvest of beautiful heirloom corn, which we then incorporated into this brew. We dehusked and cooked the multicolored corn kernels in a separate cereal mash before introducing them into the main mash, which consisted in large parts of rich, bready, and toasty Munich malts. A long boil followed by a cool lager fermentation and an extended period of cold conditioning all help to give this beer its smooth, malty, distinguishing character. Colts Bock is a brilliant, dark amber, German-style lager that packs rich and complex malt flavors into a medium-light body that drinks effortlessly and finishes clean and crisp. It opens with toasty malt flavors and hints of dark fruits which are balanced by just enough noble hop bitterness to avoid sweetness and maintain a high level of drinkability. We get notes of baking bread, browned-to-perfection toast spread with plum preserves, raisins, pie crust, subtly sweet corn, a touch of caramel, graham crackers, and herbal/ earthy/ woodsy hops.

THINK TO SWIM 🏊♂️
7% ABV | Modern West Coast-Style IPA Featuring the hops Cascade, Chinook CGX, Citra Incognito, Cryo Citra, & Mosaic Think To Swim is new age West Coast-style IPA featuring the brilliant clarity, lighter body, and crisp dryness of a traditional West Coast IPA without all of the bitterness up front. To create this IPA fusion, we combined several late hopping techniques more commonly utilized in “hazy juicy” IPAs to saturate the beer with hoppy aromas and flavors without overwhelming hop bitterness. Think To Swim was brewed with extra pale premium pilsner malt and flaked rice to lighten the body and color. Cascade hops were added to the mash to boost the aromatic thiol precursor content in the wort and a dash of concentrated Chinook CGX pellets were added as a first wort hop addition for some balancing bitterness. The vast majority of the hops were reserved for the cold side. Instead of adding hops to the whirlpool, we employed a technique called “dip hopping” using Citra Incognito, a highly concentrated advanced form of one of our dearest hop varietals. Towards the tail end of fermentation we dry hopped this heady brew with Cryo Citro and Cryo Mosaic then at terminal gravity dry hopped it again with more Cryo Citra and Mosaic. You can expect a huge hop bouquet on the nose, a light body with a touch of drinkability-promoting bitterness, delicious hoppy flavors (think old school meets new school hops), and a crispy effervescent finish that will encourage sip after sip. We get notes of bright orange zest, breeze through a bed of super fragrant geraniums, lemon mist, juicy white peach, cherry blossoms, red berries, hints of peppery dankness, pink grapefruit, and tropical fruit medley.

MURDERED OUT 🌑
7.5% ABV | Black India Pale Ale Murdered Out is a dark, satisfyingly hoppy ale crafted in the tradition of the Cascadian region of the Pacific Northwest. This mysterious, shadowy IPA was brewed with a foundation of pale Maris Otter barley malt bolstered with a variety of specialty malts for flavor and color development. Murdered Out was hopped in the mash, throughout the boil, and again in the fermenter with a heavy dose of American hops grown in the Pacific Northwest. This medium-bodied brew forms a tan head of foam when poured into a glass and emanates a bouquet of wonderful, dark, Cascadian aromas. You can expect smooth bitterness throughout, followed by a dry, crisp, hop accented finish. We get notes of sticky pine, toasted rye bread with apricot marmalade spread, pink grapefruit, lemon zest, light roast, and pungent, Cascadian forest air on a dark night.

We hopped this tasty IPA in the mash, at first wort collection, throughout the boil, in the whirpool, and again in the fermenter with a blend of Cascade, Chinook CGX, Centennial, Amarillo, and Simcoe. We get notes of toasty rye bread, zested grapefruit, orange marmalade, flaky quince pastry, jammy biscuit, plump apricot, tangerine rind, ripened peach, and sweet and sticky pine.

We get notes of spring wildflowers, zested lemon, straw, cracked pepper, barnyard hay, and complex earthy funk.

FARMHOUSE ABBEY
7.5% ABV | Belgian-Style Dubbel Ale Farmhouse Abbey is a beautiful, amber colored, Belgian-style ale that quickly develops a large, off-white head of meringue-like foam when decanted into a glass. Its beauty lies its ability to showcase layers of specialty malt and spicy Belgian yeast character while maintaining harmony, balance, finesse, and a high degree of drinkability. After primary fermentation, this specialty brew was conditioned cold for weeks to round out all the edges and allow all the nuanced flavors and aromas to gel together. Farmhouse Abbey was then bottled, corked, and caged with fresh yeast and priming sugar and underwent a secondary fermentation right in the bottle, lending additional complexity and scavenging packaged oxygen in the process, prolonging its lifetime. The resulting beer drinks like a sophisticated barley champagne, showcasing a wonderful depth of aromas and flavors followed by a dry and effervescent finish. We get notes of raisins, caramelized brown sugar, dates, toasted rye bread, biscuit, spicy clove, ripened bananas, and plum.

COLTS ABBEY
13% ABV | Belgian-Style Quadruple Ale Colts Abbey is our @worldbeercup and @greatamericanbeerfestival award winning, Belgian-style, dark, strong ale. Although not brewed by monks in a monastery, Colts Abbey has a special place in our hearts and reminds us of the Trappist beers of Belgium that inspired us when we were just starting out on our personal beer journeys. Despite its strength, Colts Abbey is remarkably drinkable and boasts a wide variety of wonderful aromas and flavors. It pours a deep copper hue into a glass and quickly develops an off white head of beautiful foam. As you sip and the beer begins to warm, you will notice aromas and flavors opening up and developing even further. A complex interplay of specialty malts, amber candi sugar, and expressive, fruity/spicy Belgian yeast at first give an impression of sweetness that fades and is replaced by a dry and effervescent finish. After primary fermentation, this high gravity brew spent extended time cold conditioning to round out all the edges and allow all the nuanced flavors and aromas to meld together. Colts Abbey was packaged with fresh yeast and priming sugar to undergo secondary fermentation right in the bottle, lending additional complexity and scavenging packaged oxygen in the process, prolonging its lifetime. We get notes of rum soaked raisin, bananas foster, toffee, glazed Honeybun, vanilla crème brûlée, caramelized sugar, fig jam, toasted marshmallow, molasses, clove, and crumb cake.
